Stuffed Chicken Breasts for Two

- 2 chicken breasts, boned and split
- 1 package of rice with wild rice mix
- 1 chopped onion
- 3/4 cup chopped mushrooms
- 1 regular sized can cream of mushroom soup
- 1 tsp basil
- 1/2 cup white wine
- 2 tbs butter
1Saute the onion and mushrooms in butter.
2Prepare the rice mix according to the directions. When half done, add the onion and mushroom mixture and finish cooking.
3Heat 1 can of cream of mushroom soup. Add 1 tsp of basil and 1/2 cup white wine and simmer for a few minutes.
4Stuff the chicken breast with the rice mixture and secure them closed with tooth picks.
5Place the breasts in a casserole dish and pour the soup mixture over them.
6Bake at 250 degrees (slow oven) until chicken is done - 1 to 2 hours.
