Ingredients

1.5 lb
boneless skinless chicken breast cut in 1 1/2" strips
2 Tbsp
oil
2 Tbsp
ginger root, minced
2 medium
onions, sliced
6 c
broccoli florets
1 c
thinly sliced carrots
1/2 lb
mushrooms, sliced
3/4 c
chicken stock
2 Tbsp
sherry
2 tsp
low sodium soy sauce
2 tsp
cornstarch
2 Tbsp
water
4 c
chinese cabbage or bok choy, sliced

Step-By-Step

1In wok or large heavy skillet, heat oil over high heat.
2Gradually add chicken to very hot oil with 1/2 of minced ginger root.
3Stir-fry for 2 minutes.
4Remove from wok.
5Set aside.
6Add onion and stir-fry for 2 minutes.
7Set aside with chicken.
8Add broccoli, carrots, mushrooms and rest of ginger root to wok.
9Stir fry for 2 minutes.
10Add a little water, if necessary to prevent sticking.
11Mix stock, sherry and soy sauce.
12Pour over broccoli.
13Cover and steam for 2 minutes.
14Stir in onions and chicken.
15Mix cornstarch and water.
16Stir into wok.
17Bring to boil.
18Add chinese cabbage, bok choy or green cabbage.
19Stir and cook for 1 minute until crisp-tender.
