Slow-cooked sweet & sour chicken

This is my moms recipe and it's so yummy. I cook it on low for the most tender chicken, but you can cook it on high. The lemonade gives it a great tangy flavor.

Ingredients

3 lb
chicken pieces, thighs & drumsticks, skinned
1/4 tsp
salt
3/4 c
frozen lemonade concentrate, thawed
3 Tbsp
packed light brown sugar
3 Tbsp
ketchup
1 Tbsp
white vinegar
2 Tbsp
cornstarch
2 Tbsp
cold water
hot cooked rice

Directions Step-By-Step

Place chicken in a 4-quart slow-cooker, sprinkle w/ salt. In medium bowl, whisk together lemonade, brown sugar, ketchup, and vinegar until smooth.

Pour mix over chicken. Cover, cook on low for 6 hrs, or on high for 3-1/2 hrs. Transfer chicken to a platter & keep warm.

Pour liquid from cooker into a saucepan and skim the fat . In lg measuring cup, combine cornstarch and water. Stir into saucepan. Cook over medium heat, stirring, until thickened. Cook 2 more mins. Spoon sauce over chicken and serve w/ rice.
