lean ground beef, turkey or shredded chicken
bell pepper, seeded & chopped
mushrooms, fresh, chopped
1 - 14 oz. can(s)
1 - 32 oz. bottle
v-8 juice, reduced-sodium
lemon juice, fresh
1 - 14 oz. can(s)
beans, rinsed & drained (it doesn't state what kind of beans - i would use kidney or garbanzo)
cayenne pepper, or to taste
cilantro, fresh, chopped
parsley, fresh, chopped
1In a stockpot, heat oil over medium-high heat. Saute meat/poultry until cooked through, about 5 minutes. Drain & set aside.
3Stir in remaining ingredients, except cilantro & parsley. Cover & simmer 20 minutes. Stir in cilantro & parsley. Cover, simmer 10 minutes longer. Store soup in frige up to 5 days. Freezes well.
