Slimming Vegetable Soup

Kimmi's Story

Women's World magazine (except they called it "Fat Flush Soup"). To me that didn't sound so appitizing, so I changed it to "Slimming Vegetable Soup".

It sounds simular to the "Cabbage Soup Diet".

Ingredients

2 tsp
olive oil, extra virgin
1 1/4 lb
lean ground beef, turkey or shredded chicken
1 large
onion, chopped
2 clove
garlic, chopped
1 small
bell pepper, seeded & chopped
8 oz
mushrooms, fresh, chopped
1 - 14 oz. can(s)
tomatoes, crushed
1 - 32 oz. bottle
v-8 juice, reduced-sodium
1 Tbsp
lemon juice, fresh
1 - 14 oz. can(s)
beans, rinsed & drained (it doesn't state what kind of beans - i would use kidney or garbanzo)
1 Tbsp
cumin, ground
1/8 tsp
cayenne pepper, or to taste
1/4 c
cilantro, fresh, chopped
1/4 c
parsley, fresh, chopped

Directions Step-By-Step

In a stockpot, heat oil over medium-high heat. Saute meat/poultry until cooked through, about 5 minutes. Drain & set aside.

Saute onion, garlic, bell pepper & mushrooms until soft, about 5 minutes.

Stir in remaining ingredients, except cilantro & parsley. Cover & simmer 20 minutes. Stir in cilantro & parsley. Cover, simmer 10 minutes longer. Store soup in frige up to 5 days. Freezes well.

We like the beef version better than the chicken.

Good to know! I will definately make this the next time I go grocery shopping - within the next week or two. :)
