This was just an idea for something fun to do with broccoli slaw back when it first came out. I've been making it ever since and the family loves it!

Ingredients

3 Tbsp
peanut oil
2 lb
boneless, skinless chicken thighs, trimmed of fat and cut into thin strips
3 clove
garlic, minced
2 Tbsp
fresh ginger root, minced
1/4 c
soy sauce
1 pkg
(14 oz) rice noodles, cooked and rinsed under cold water
1 bag(s)
(16 oz.) fresh broccoli slaw
2-3 Tbsp
dark sesame oil

Directions Step-By-Step

Heat peanut oil in a large wok or deep skillet over medium-high heat until hot. Add chicken and cook, stirring frequently, until no longer pink. Add vegetables and lid. Cook until vegetables are cooked through, about 5 minutes.

Add rice noodles, soy sauce, garlic, ginger and sesame oil. Mix well. Pour over chicken and vegetables, add noodles and toss to mix and heat through.
