Ingredients For roasted grecian chicken

  • 1 tsp
    lemon zest, grated
  • 1 tsp
    salt
  • 1 tsp
    oregano, dried
  • 1/2 tsp
    mint, dried
  • 1 tsp
    thyme, dried
  • 1 Tbsp
    garlic powder
  • 1 tsp
    onion powder
  • 1 tsp
    pepper
  • 1 stick
    butter, room temperature
  • 6 - 7 lb
    chicken, whole, skin on
  • SERVE WITH (OPTIONAL):
  • greek potatoes

How To Make roasted grecian chicken

    Preheat oven to 375 degrees F.

    In a medium bowl, combine the 1st 8 ingredients; stir to combine. Add butter; stir well.

    Place chicken in large roasting pan. With fingers, carefully seperate skin from the breast starting from the neck & thighs (DO NOT POKE HOLES INTO SKIN). Spread 1/2 the butter mixture between skin & meat; pat skin down to smooth. Rub remaining butter mixture over top of skin all over.

    Roast chicken until meat thermometer registers at 180 degrees F., about 2 hours. Let stand 10 minutes before carving. Serve with greek potatoes.
