Ingredients For roasted grecian chicken

1 tsplemon zest, grated

1 tspsalt
-
1 tsporegano, dried

1/2 tspmint, dried

1 tspthyme, dried

1 Tbspgarlic powder
-
1 tsponion powder
-
1 tsppepper
-
1 stickbutter, room temperature

6 - 7 lbchicken, whole, skin on
- SERVE WITH (OPTIONAL):

greek potatoes
How To Make roasted grecian chicken

1Preheat oven to 375 degrees F.

2In a medium bowl, combine the 1st 8 ingredients; stir to combine. Add butter; stir well.

3Place chicken in large roasting pan. With fingers, carefully seperate skin from the breast starting from the neck & thighs (DO NOT POKE HOLES INTO SKIN). Spread 1/2 the butter mixture between skin & meat; pat skin down to smooth. Rub remaining butter mixture over top of skin all over.

4Roast chicken until meat thermometer registers at 180 degrees F., about 2 hours. Let stand 10 minutes before carving. Serve with greek potatoes.
