This sandwich was so tasty, melt in your mouth delicious! Super simple too, but looks very decadent. Great served with coleslaw or fresh fruit.

Blue Ribbon Recipe

Serve this chicken panini to guests and people will think you picked these up at a fancy sandwich shop. They'll be very impressed with your cooking skills when they find out they're homemade. We picked up a chicken at the grocery store deli which adds protein to the sandwich and a bit of heartiness. Each bite has gooey cheese and creamy avocado. Together, this is a super easy and delicious panini.

Ingredients For roasted chicken panini

  • 1
roasted chicken, pre-cooked from the deli counter.
  • 2-3 slice
    Havarti cheese
  • 1/2
    avocado, peeled and sliced
  • 4 slice
    sweet French bread
  • 2 tsp
    butter, room temperature
  • 4 Tbsp
    mayonnaise, whatever kind you prefer
  • 1/2 pt
coleslaw, homemade or from deli counter

How To Make roasted chicken panini

  • Brushing butter on the bread.
    1
Heat panini grill; butter the outside of the French bread slices.
  • Brushing inside with mayonnaise.
    2
Then add mayo to the inside of them. If you want mustard, you can add that too. It has a creamier taste without it to me.
  • Laying out cheese; slicing avocado and chicken.
    3
Slice up one-half of an avocado. Separate your cheese, then start slicing chicken breast or dark meat (your preference) off the roasted chicken. Enough for 2 sandwiches.
  • Chicken placed on a piece of bread.
    4
On one piece of the bread, place sliced chicken meat.
  • Avocado and cheese on top of the chicken.
    5
Then cheese slices and avocado on one side of bread and top with the other slice.
  • Grilling the sandwich in a panini press.
    6
Place the sandwiches in your panini grill for approx. 5 minutes, maybe less. Watch for the color of the toasting, or when cheese starts to melt. Add a side of coleslaw or fresh fruit. Enjoy! **These sandwiches can be made in a skillet like making a grilled cheese sandwich if you don't have a panini grill**
