Ingredients

CHICKEN:
4 lb whole chicken
olive oil, extra virgin
seasonings of choice (i love mccormick original chicken seasoning)
DRESSING:
12 oz. pkg stove top stuffing for chicken or savory herb
1 can(s) chicken broth, low salt
1/4 c butter
1 large onion, chopped
1 pkg spinach, frozen, thawed & squeezed of juice
6 slice bacon, raw, chopped into pieces
5 clove garlic, minced
1 tsp sage, dried
1 tsp rosemary, dried
3 Tbsp heavy cream
3 Tbsp lemon juice

Preheat oven to 350 degrees F. with 2 oven racks in oven.

CHICKEN:

Place a roasting rack in a large roasting pan. Rinse chicken; pat dry with paper towels.

Pour olive oil into hand & spread all over chicken skin.

Season chicken inside & out with desired seasonings. www.mccormick.com/Products/...

DRESSING:

In a large bowl, toss stove top with chicken broth.

In large skillet, melt butter over medium heat. Add onion, spinach, bacon, garlic, sage & rosemary to skillet; saute until tender, about 7 minutes.

Add spinach mixture to dressing mixture. Stir in heavy cream & lemon juice; mix well.

In a large greased baking dish, pour dressing mixture in.

On lower oven rack, place dressing dish & on upper oven rack, place roasting pan.

Roast chicken until chicken is golden, about 1 hour 45 minutes.

NOTE: Halfway through cooking time, you may want to switch chicken to lower rack & dressing to upper rack.
