Ingredients

  • CHICKEN:
  • 4 pounds whole chicken
  • olive oil, extra-virgin
  • seasonings of choice (i love mccormick original chicken seasoning)
  • DRESSING:
  • 12 oz. packages stove top stuffing for chicken or savory herb
  • 1 can chicken broth, low-salt
  • 1/4 cup butter
  • 1 large onion, chopped
  • 1 package spinach, frozen, thawed & squeezed of juice
  • 6 slices bacon, raw, chopped into pieces
  • 5 cloves garlic, minced
  • 1 teaspoon sage, dried
  • 1 teaspoon rosemary, dried
  • 3 tablespoons heavy cream
  • 3 tablespoons lemon juice

How To Make roasted chicken & herb dressing

  • Step 1
    Preheat oven to 350 degrees F. with 2 oven racks in oven.
  • Step 2
    CHICKEN: Place a roasting rack in a large roasting pan. Rinse chicken; pat dry with paper towels. Pour olive oil into hand & spread all over chicken skin.   • Step 3
    DRESSING: In a large bowl, toss stove top with chicken broth. In large skillet, melt butter over medium heat. Add onion, spinach, bacon, garlic, sage & rosemary to skillet; saute until tender, about 7 minutes.
  • Step 4
    Add spinach mixture to dressing mixture. Stir in heavy cream & lemon juice; mix well.
  • Step 5
    In a large greased baking dish, pour dressing mixture in.
  • Step 6
    On lower oven rack, place dressing dish & on upper oven rack, place roasting pan. Roast chicken until chicken is golden, about 1 hour 45 minutes. NOTE: Halfway through cooking time, you may want to switch chicken to lower rack & dressing to upper rack.
