Quick chicken in white wine sauce

This is one I have used for a while now, for when you need something quick. Always good to have some frozen chicken breasts around! It's also a good make-ahead dish.

I'll take a photo next time I make it.

Ingredients

chieck breasts
1 small
onion, chopped
1/2 c
white wine
1/2 tsp
thyme, dried
1/4 tsp
black pepper
1 clove
fresh garlic, minced
1 Tbsp
flour
1 Tbsp
parsley (fresh if available)
4 oz
sliced mushrooms
1/4 c
olive oil

Directions Step-By-Step

Heat 1/4 cup of oil in a skillet, add chicken breasts and brown uniformly. Remove the chicken to a nearby plate and reserve the pan oil.

In a shaker or jar, combine the wine, pan oil, flour , thyme, pepper and minced garlic. Give this a good shake.

Combine the chicken, shaker contents and chopped onion in the pan and simmer for 1/2 hour. This will be very fragrant.

Add the mushrooms ten minutes later. Serve over rice of your choice.
