Potluck Chicken Casserole

Ingredients

1/2 c
mushrooms, freshly chopped
3 Tbsp
onion, finely chopped
2
garlic cloves, minced
4 Tbsp
butter
3 Tbsp
all purpose flour
1.25 c
milk
3/4 c
mayonnaise
4 c
chicken, cooked and cubed
3 c
long grain rice, cooked
1 c
celery, chopped
1 c
peas, thawed
2 oz
pimentos, drained
2 tsp
lemon juice
1 tsp
salt
1/2 tsp
pepper
3/4 c
corn flake cereal, crushed

Step-By-Step

1In a saucepan over medium heat, saute mushrooms, onion and garlic in 3 tablespoons butter until tender; stir in flour until thoroughly combined.

2Gradually add milk; bring to a boil.

3Cook and stir for 2 minutes or until thickened and bubbly.

4Remove from heat; stir in mayonnaise until smooth.

5Add chicken, rice, celery, peas, pimientos, lemon juice, salt and pepper; mix well.

6Spoon into an ungreased 12x9x2 inch baking dish.

7Melt remaining butter; toss with cornflakes and sprinkle over casserole.

8Bake, uncovered, at 350 for 30-35 minutes or until bubbly.
