This recipe was given to me by a chef friend many years ago and I have been serving it ever since! The chicken stays moist and the combination of pineapple and soy sauce gives the dish a slightly Asian flare.
Toss chicken pieces in flour, salt and pepper. Brown chicken in oil and place in an ungreased 5 quart casserole dish. Saute onion in oil. Add tomato sauce, pineapple chunks, and soy sauce to taste to the cooked onions. Cook until slightly thickened - add extra flour, if necessary. Pour mixture over chicken and bake in the oven @ 350 degrees for 1 1/4 hours. Serve with rice.
