I know this might sound like every other fried chicken recipe but someone told me thats kind of how people down south make it. I'm from Hawaii not sure what "down south" means lol. But I love frying them this way.
First clean & butterfly cut open each breast. Then season with the salt & pepper.
In a small bowl mix the flour & bread crumbs well. In another bowl beat the eggs well.
In a large heavy frying pan pre-heat the oil on medium heat.
Then dip each piece of chicken into the eggs first & then into the flour mix & then carefully place it into the frying pan skin side down. Do with the remaining chicken & fry until fully cooked about 10 to 15 mins. It should be a nice golden brown.
