Slow Cooker Crock Pot

Ingredients

onion, diced
1
bell pepper, diced
2 clove
garlic, minced
1 c
carrots, diced
1 can(s)
diced tomatoes with green chiles
1 can(s)
black beans, drained and rinsed
4 c
chicken broth
3 c
frozen corn
2 tsp
chili powder
1 Tbsp
ground cumin
1/4 tsp
cayenne pepper
1/4 tsp
salt
2-3 c
shredded cooked chicken

Step-By-Step

1Stir all ingredients except chicken together in slow cooker.
Cover, and cook on low for 5-7 hours.

2Stir in chicken and cover.
Continue cooking for 1 hour.

3Total cooking time: 6-8 hours

4Notes: *"Gluten free" - as long as broth and chili powder are gluten free

Omit the chicken (double up on the beans) and use vegetable broth for a vegetarian version of this soup.
