I was looking for a recipe for the garlic sauce served at the Mediterranean restaurants we go to and became hooked on several dishes. This is just one of the many dishes. Of course any recipe calling for 1 c of garlic would capture my attention!
I usually serve this with couscous.
This is the original recipe from dedemed.com. At 30 mins,the chicken is tender,but I like it falling off the bone,I cook it at least 1 hour.
Preheat a large 4 quart pot on medium low heat, add 2 tbs olive oil, add the chicken and ½ tsp salt, skin down, to the pot and cook for 15 minutes, rotating the chicken every 5 minutes. Make sure to cover the chicken in order to prevent the grease from spattering. After 15 minutes, remove the chicken from the pan and place in a dish and set aside. In the same pot, add the onions, garlic, mushrooms, 1 tbs olive oil, ½ tsp salt and black pepper, cover and saute for about 5 minutes as well. After 5 minutes, then add the stock and tomato paste and stir, then add chicken and cover, cook on low heat for 30 minutes.
