Mediterranean Braised Chicken
I usually serve this with couscous.
This is the original recipe from dedemed.com. At 30 mins,the chicken is tender,but I like it falling off the bone,I cook it at least 1 hour.

- 3 lbs chicken drumsticks or thighs
- 3 c mushrooms
- 2 c onions,chopped
- 1 c whole peeled garlic cloves
- 1/3 c catsup (i use tomato paste instead)
- 3 c chicken or veggie stock
- 1 t. salt
- 1/2 t black pepper
- 3 tablespoons olive oil
1Preheat a large 4 quart pot on medium low heat, add 2 tbs olive oil, add the chicken and ½ tsp salt, skin down, to the pot and cook for 15 minutes, rotating the chicken every 5 minutes. Make sure to cover the chicken in order to prevent the grease from spattering. After 15 minutes, remove the chicken from the pan and place in a dish and set aside. In the same pot, add the onions, garlic, mushrooms, 1 tbs olive oil, ½ tsp salt and black pepper, cover and saute for about 5 minutes as well. After 5 minutes, then add the stock and tomato paste and stir, then add chicken and cover, cook on low heat for 30 minutes.
