Salt and pepper chicken. Place the chicken in a shallow dish or ziploc bag; add buttermilk. Cover or seal for at least 2 hours.
Remove the chicken pieces, discard buttermilk. Dredge the chicken pieces in flour. Pour oil in fry pan or Dutch oven and heat to 350*(I used an electric skillet). Add the floured chicken a few pieces at a time and cook 8 minutes then turn and cook for 8 minutes longer or until golden brown. Drain on paper towel.
