Ingredients
- 3 tablespoons honey
- 1 tablespoon lemon juice
- 1 teaspoon lemon zest
- 6 tablespoons butter, room temperature
- 1 tablespoon Dijon mustard
- 1 tablespoon rosemary, dried
- 2 rosemary sprigs
- 5 cloves garlic, minced
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 6 - 7 pounds roasting chicken
How To Make lemon honey roast chicken

Step 1Preheat oven to 350 degrees F. Combine honey, lemon juice & zest; reserve. Combine butter, mustard, 1 Tbsp rosemary, garlic, salt & pepper. Reserve 2 Tbsp butter mixture.

Step 2Place chicken in roasting pan. With fingers, carefully seperate skin from chicken breast starting from neck. Spread remaining butter mixture (except the reserved 2 Tbsp) over breast meat; pat skin down to smooth. Rub reserved butter mixture over chicken skin. Place rosemary sprigs inside cavity.

Step 3Roast chicken until thermometer inserted into thickest part of thigh registers 180 degrees F. & juices run clear when pierced with a fork, about 1 hour 45 minutes, brushing with reserved honey mixture during last 10 minutes. Transfer chicken to serving platter. Let stand 10 minutes before carving. Serve juices with chicken.
