Ingredients

  • 3 tablespoons honey
  • 1 tablespoon lemon juice
  • 1 teaspoon lemon zest
  • 6 tablespoons butter, room temperature
  • 1 tablespoon Dijon mustard
  • 1 tablespoon rosemary, dried
  • 2 rosemary sprigs
  • 5 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 6 - 7 pounds roasting chicken

How To Make lemon honey roast chicken

  • Step 1
    Preheat oven to 350 degrees F. Combine honey, lemon juice & zest; reserve. Combine butter, mustard, 1 Tbsp rosemary, garlic, salt & pepper. Reserve 2 Tbsp butter mixture.
  • Step 2
    Place chicken in roasting pan. With fingers, carefully seperate skin from chicken breast starting from neck. Spread remaining butter mixture (except the reserved 2 Tbsp) over breast meat; pat skin down to smooth. Rub reserved butter mixture over chicken skin. Place rosemary sprigs inside cavity.
  • Step 3
    Roast chicken until thermometer inserted into thickest part of thigh registers 180 degrees F. & juices run clear when pierced with a fork, about 1 hour 45 minutes, brushing with reserved honey mixture during last 10 minutes. Transfer chicken to serving platter. Let stand 10 minutes before carving. Serve juices with chicken.
