Ingredients For hg yummy yummy chicken gyros

  • SAUCE:
  • 1/4 c
    greek yogurt, fat free, plain
  • 3 Tbsp
    seedless cucumber, peeled & finely chopped
  • 1 1/2 tsp
    dill, fresh
  • 1 tsp
    lemon juice
  • 1/4 tsp
    garlic, minced
  • 1/8 tsp
    sea salt
  • MARINADE & CHICKEN:
  • 1/3 c
    lemon juice
  • 1 1/4 tsp
    oregano, dried
  • 1 tsp
    garlic, minced
  • 1/8 tsp
    sea salt
  • 1 - 8 oz
    chicken breast, boneless & skinless, cut into 1
  • GYROS:
  • 2
    pitas
  • 1/4 c
    seedless cucumber
  • 1/4 c
    grape or cherry tomatoes, halved
  • 2 Tbsp
    feta cheese, reduced fat, crumbled

How To Make hg yummy yummy chicken gyros

    SAUCE: In a medium bowl, combine all sauce ingredients, & mix well. Cover & refrigerate.

    MARINADE: In a small bowl, mix lemon juice, oregano, garlic, & salt. Place cubed chicken in a large sealable plastic bag & cover with marinade. Seal & refrigerate for at least 20 minutes or longer.

    Bring a grill pan (or skillet) sprayed with nonstick spray to medium-high heat. Add chicken, & discard marinade.

    Cook chicken for 4 minutes. Flip chicken & cook for about 4 more minutes, until cooked through.

    ASSEMBLY: Microwave pitas for 20 seconds, or until warm & pliable. In a medium bowl, mix cucumber, tomatoes, & feta cheese.

    Plate pitas & spread the centers with sauce. Top with cooked chicken & cucumber mixture. Fold & eat!
