Grilled Chicken and Pico Quesadilla

Three of my favor things in the world, cheese, grilled boneless skinless chicken thighs, and pico de gallo. And a crispy flour tortilla to boot. This is a winning combination.
The cook time on here reflects the time it takes to make one quesadilla providing the chicken and pico de gallo is already prepared.

Directions Step-By-Step

Make Pico de Gallo.
Pico de Gallo
Slice grilled chicken, grated cheese. Heat a skillet or griddle to hot, spray one side of flour toritlla with spray oil, place that side down on skillet. Place a small amount of cheese on tortilla, then chicken, then pico de gallo, then a little more cheese. Spray one more tortilla on one side, and place the sprayed side UP. Once the bottom tortilla has browned, flip and brown other tortilla. The cheese will melt as you do this. If you have a good hot surface it only takes about 2 min. or less per side to brown. Time will depend on temp. (Once you flip it, if that tortilla is not good and brown, just flip it back over for a minute or so).
