I got this recipe from my sister, and I get wonderful compliments on it EVERY TIME I make it. It is very versatile, so you can add or take away some of the ingredients, and it will still be very good. Most people like it because it is low in fat, but still tastes very good. I hope if you try it, you will like is as much as my family does.

chicken strips
3 Tbsp
olive oil, extra virgin
1 Tbsp
mrs. dash....... extra spicy
1 Tbsp
mrs. dash....... garlic and herb
1 tsp
garlic powder....... use all spices to taste
1 large
red onion
1 large
red bell pepper cut into strips
1 large
yellow bell pepper cut into strips
1 medium
container of fresh mushrooms, you can use canned also.
2 can(s)
del monte diced tomatoes- w/garlic basil & oregano with juice.
1 1/2 c
fetta cheese
1 c
sliced black olives

Directions Step-By-Step

Cut Chicken into small pieces & saute in the olive oil till chicken is white on each side. Don't cook chicken all the way, just a couple of minutes on each side. Add all the vegetables, pour tomatoes with the juice on top of the chicken & add the fetta cheese, then add the olives. Cover pan, and let simmer for 40 minutes. NOTE:
You can serve this with noodles or rice if desired.
