1 lbgrapes, seedless, red & green, halved (about 1 1/2 c each)

6 - 7 lbchicken, whole, skin on

1 stickbutter, room temperature

1 tspherbes de provence

1 tspsalt
-
1/2 tsppepper
-
2shallots, thinly sliced
-
1 cwhite wine
-
1/2 cheavy cream
How To Make grape harvest roasted chicken

1Preheat oven to 350 degrees F.

2Place chicken in roasting pan (breast side down). Fill chicken cavity with 1/2 of mixed grapes. Reserve remaining grapes.

3In a medium bowl, combine herbes, salt & pepper; mix well. Add butter; mix to combine. Rub all over chicken. Roast 2 hours or until thermometer registers 180 degrees F., adding shallots & reserved grapes during the last 15 minutes of cooking.

4Transfer chicken to serving platter. Let stand 20 minutes before serving.

5Place roasting pan over 2 burners on medium high heat. Stir in wine; cook until reduced to 1/2, about 1 minute. Add cream; cook 3 minutes. Serve with chicken.
