Ginger Mandarin Chicken Salad with Avocado

This is my entry for the Ninja Chef's Challenge using Chicken Breast, Ginger, and Avocado.

I absolutely love Asian cuisine and when I saw the ingredients for the challenge my thoughts automatically went to making something with an Asian flair.

This was so good and healthy for you too!

Ingredients

DRESSING

2 Tbsp
rice vinegar
2 Tbsp
light brown sugar
1 1/2 Tbsp
soy sauce
1 Tbsp
sriracha sauce
1 1/2 tsp
fresh ginger, grated
1/4 c
canola oil
pinch
salt

SALAD COMPONENTS

11 oz
canned mandarin oranges, drained
6 c
cabbage, shredded
2 c
cubed or sliced cooked chicken breast
1 large
firm-ripe avocado, pitted, peeled, and cubed

green onions, trimmed and sliced diagonally
1/4 c
chow mein noodles
2 Tbsp
sesame seeds, toasted

Directions Step-By-Step

In a bowl, whisk together vinegar, brown sugar, soy sauce, Sriracha sauce, and ginger. Slowly drizzle in oil, whisking constantly. Season with salt. Set dressing aside.

In a large serving bowl, toss cabbage and chicken with dressing. Top with avocado, orange slices, and chow mein noodles, then garnish with green onions and sesame seeds.
