Sprinkle chicken with salt and pepper, and place in a shallow bowl. Whisk together eggs and milk; pour over chicken, turning pieces to coat. Let stand 5 minutes.
Combine flour, garlic powder, and paprika in a ziplock freezer bag. Drop 1 piece of chicken at a time into bag, seal and shake to coat. Repeat with rest of chicken.
Pour oil to a depth of 2-inches in a large, heavy skillet. (I use cast iron) Heat oil to 360. Add chicken, and cook, uncovered, 20 minutes or until done, turning as needed. Drain.
