My sister gave me this recipe a long time ago. No clue where it came from.
BUT IT'S AWESOME! We just love it!

Slow Cooker Crock Pot

Ingredients

1 Tbsp
olive oil
2
onions, finely chopped
4 clove
garlic, minced
1 tsp
herbs de provence
1/2 tsp
salt
1/2 tsp
cracked black pepper corns
1 Tbsp
flour
1/2 c
white wine
1 c
chicken stock
14 oz
diced tomatoes, with juice
14 oz
artichoke hearts, drained and rinsed
3 lb
skinless bone in chicken thighs (around 8)
basil to taste

Directions Step-By-Step

Heat oil over medium heat, add onion and cook until soft.

Add garlic, Herbs de Provence, salt and pepper, cook for 1 minute, stirring.
Add flour, stir for 1 minute, add the wine, cook for 1 minute.
Add the stock and tomatoes, and bring to a boil.

Stir in artichoke hearts, remove from heat.

Place chicken thighs in the crock pot, and cover with sauce.

Cook on low for 6 1/2 hours.

Delicious served over rice.
