Boil the chicken in water seasoned with the salt, pepper and poultry seasoning for 55 minutes to 1 hour 15 minutes, or until chicken is very tender.
Remove boiled chicken from pot, set aside, and reserve about 8 cups of the broth.
In a large bowl, mix flour, oil and ice water just until everything is incorporated. Roll half of the dough out thin and slice into strips. Drop small chunks of the strips into BOILING broth. Repeat with other half of the dough, stirring with a fork every once in a while to prevent sticking.
Cook 35-40 minutes, stirring often, or until the dumplings are no longer "doughy". Turn heat to low and then off.
