Not your usual meat, potatoes & gravy. Nice because it all goes together in one dish.

Ingredients

potato & onion pierogies

chicken breasts, split, boneless and skinless
1 Tbsp
olive oil
1 clove
garlic, minced

baby onions
1/4 c
sliced celery
1/2 c
each julienne carrots & sliced mushrooms
1/2
bay leaf
1/2 tsp
each rosemary & thyme leaves, crushed
1/2 c
diced fresh tomato
1/2 Tbsp
dijon mustard
1/4 c
dry red wine

Directions Step-By-Step

Allow pierogies to stand in HOT tap water for 5 minutes; drain.
Arrange in a large oven-proof casserole sprayed with non-stick cooking spray.

Meanwhile, brown chicken in olive oil with garlic.
Add onions, carrots, mushrooms, celery and seasonings; continue cooking over medium heat for 3 minutes.

Stir in tomato, mustard and wine. Spoon over pierogies.
Bake at 350^ for 20 minutes.
