This recipe is so easy even a novice can make it. I love, love, love chicken pot pies and in all my 64 years I have never made one.Than I decided why not try to make one. What have I go to lose? I am HOOKED!!
1. Preheat oven to 350 degrees.Put pie crust on a glass pie plate. Cut chicken into small bite sized pieces and boil with just a little bit of water until chicken is cooked thoroughly, then drain. Peel, cube and than boil potatoes until they break apart. Drain well and let cool slightly.
2. In a large mixing bowl, place drained chicken, potatoes and vegetables together. Mix together GENTLY, not to mush them.Add one can cream of chicken soup (do NOT add water.) Put the mixture into the pieplate that already has the crust on it.Sprinkle flour evenly over filling. Lay the other pie crust on top. Pinch the seams together, and tuck in. Place small slits in the middle of the pie for steam release. Place on a cookie sheet and bake for 45-60 minutes until top crust is nicely browned. Remove from oven. Let sit for a couple of minutes, and ENJOY!!!
