Easy Chicken n Dumplings

I just love the dumplings they serve at Cracker Barrel restraunts and wanted to find something similar. My sister gave me this recipe...it sure fits the bill! So easy and so good! Sometimes I add cooked carrots and/or celery to it.

Ingredients

DUMPLINGS
2 c
self-rising flour
1/4 c
shortening
1/2 c
chicken broth
BROTH
2 Tbsp
butter
1/4 c
self-rising flour
2 can(s)
chicken broth (16 oz. each)
1/2 tsp
pepper
1/2 c
milk
1 1/2 c
chicken, cooked and diced

Directions Step-By-Step

Cut crisco into flour until pea size. Blend in just enough chicken broth until dough leaves sides of bowl. Turn onto floured surface. Knead 2-3 times. Roll out to 1/8 inch thick. Cut into small strips.

For broth, melt butter in dutch oven. Whisk in flour. It will be thick. Gradually whisk in broth. Bring to a boil. Add dumpling strips to boiling broth. Cover and reduce heat to low. Simmer 15 min.
Stir occasionally to prevent sticking. Add remaining ingredients and heat 5 min. longer.

Yes, I was raised on the fluffy biscuit type, so didn't know any better. But I love the chewy ones so much better now too. I looked at so many different recipes on here but yours stood out and I am so glad I picked it to try. It's a keeper!

Laurie, I'm glad this recipe worked for you! I love the heavy chewy dumplings and had a hard time finding a similar recipe. When my sister made this for me I too went crazy over it. It's what I had been searching for. So many recipes are for the fluffy biscuit-like dumpling. I like that it's so easy too!

Sharry, I have never made this type of dumpling before but I wanted to try something different for my husband who is from Memphis. He absolutely LOVED them! He ate 2 full bowls. I am saving this recipe and will definitely be making it again. Thank you!

@ Paula. Those roasted chickens from Sam's Club makes awesome chicken salad. I always pick up 2 when I go shopping there. One for dinner that night and the other for chicken salad the next day. The chicken is even better the next day.

Girls, I am even so lazy that I just buy and debone the roasted chicken at Wal-Mart when I make most things with chicken! So I am sure I will do that when I make this recipe also. :-)
