Ingredients

8 medium chicken breast , skinless and boneless
1 bunch broccoli, fresh
SAUCE
4 can(s) cream of chicken soup
1/2 c mayonnaise
3 Tbsp lemon juice
1 1/2 Tbsp curry powder
OPTIONAL
1/2 c bread crumbs, dry

I have been making this casserole for over 25 years with a few tweaks along the way but have no idea where or who I got it from but it is delicious and better yet, simple to make. My 3 longtime girlfriends (we're celebrating 30 yrs of friendship this Aug,2012)fondly refer to it as "THE Chicken Dish". Many laughs around the dining room table as we enjoyed this casserole. I serve it over long grain white rice but you can use pasta or serve without either.

Directions

Boil the chicken breast for about 20 minutes. Let cool to the touch and then cut in approx. 1" cubes.
At this time preheat your oven to 350°

Place broccoli in Microwave safe dish and cover. Microwave 10 minutes. Chop into bite size pieces.

As the broccoli is cooking, whisk the sauce ingredients together in a med bowl and set aside

Place the cut chicken breast pieces in a oven safe dish.

Layer chopped broccoli on top of the cut chicken

Pour sauce over the chicken and broccoli. Add the optional bread crumbs if desired at this time.

Bake in preheated 350° oven for 1 hour. Serve over rice is desired

Just what I was looking for. I use to make this when my son was young. I haven't made it because my husband doesn't like curry. But I thought of it and wanted to make it. Couldn't find my recipe, and here it is. Thanks. (didn't use the curry, still good. also put some fresh mushrooms in it)
