Crockpot Creamy Herbed Chicken stew

This is so easy,economical and a great dish to start it and forget it until mealtime.

Ingredients

4 c
baby carrots
4
yukon gold potatoes cut into 11/2 " pieces
1 large
onion/chopped
2 medium
stalks of celery,sliced (1 cup)
1 tsp
dryed thyme
1/2 tsp
kosher salt
1/2 tsp
fresh pepper
2 lb
boneless,skinless chicken thighs
2 c
chicken stock
2 c
fresh snap peas
1 c
heavy cream
1/2 c
flour
1 tsp
dried thyme leaves
cooking spray

Step-By-Step

1Spray 5-6 quart crockpot

2place the carrots,potatoes,onion,and celery in crockpot

3sprinkle with 1 tsp. thyme,salt and pepper

4top with chicken

5pour the chicken stock over

6cover,cook on LOW about 7-8 hours,adding the pea pods last 5-10 minutes of cooking time.

7Remove the chicken and veggies from crockpot to a serving bowl,using a slotted spoon;cover to keep warm.

8increase heat setting to HIGH,mix together in a small bowl mix cream,flour,and 1 tsp. of the thyme,stir into the liquid in crockpot.

9COVER,cook about 10 minutes until thickened.Pour sauce over the chicken and vegetables.
