Crispy Lemon Chicken

- 4 tbsp. melted butter
- 3 tbsp. lemon juice
- 4 tbsp. dry sherry
- 2 cloves garlic, minced
- 1 t. chopped parsley
- 1 chicken, halved (2 1/2 to 3 lbs.)
- 2 t. natural meat tenderizer, unseasoned
- pepper to taste
1In small bowl, mix first 5 ingredients. Mix well. Set aside
2Moisten chicken with water; sprinkle evenly with tenderizer. Use no salt. Pierce chicken deeply with fork; Repeat on all sides. Season with pepper.
3. Place chicken skin side down on broiler pan. Broil 5 to 6 inches from heat, basting frequently about 20 minutes per side or until done.
