Boil chicken breasts with bay leaf, salt, pepper, and garlic salt, till chicken is no longer pink in middle. Remove chicken from water, Set aside to cool. Leave Bayleaf in the water.
Chop onion, and cilantro leaving most of the stem. Chop up the chicken.
Mix chicken, onion, and cilantro with the mayo to the consistancy desired. add salt and pepper to taste. refridgerate till cold.
use as a sandwich spread, great on wheat thins, make an appatizer by rolling in tortillas with cheese, and slicing into pinweels.
