- chicken thighs
- 1/4 c
- each olive oil and minced garlic
- 1/2 bunch
- cilantro chopped
- 1 c
- sweet chili sauce
1Place chicken in large zip lock bag. Place olive oil, garlic, and cilantro in food processor and process until smooth. Scoop the marinade into the bag with the chicken squeeze the air out and lock the bag.
2Knead the bag around to get the marinade all over the chicken. Let marinate overnight.
3Preheat oven 350 degrees. Remove chicken from bag and scrap as much marinade as you can out and rub on chicken. Bake about 30 minutes.
4Brush chicken with sweet chili sauce.
Great serve with cilantro lime rice.
