A great cook, by the name of Terrie Hoelscher shared a similar recipe on JAP. I used hers as a base and tweaked it. This is an amazing casserole. Enjoy!

Ingredients

celery stalks (chopped)
1
onion (medium-diced)
2 Tbsp
butter
2 c
roasted chicken (chopped)
1 can(s)
chop suey vegetables (14 oz)
1 can(s)
water chestnuts (small can)
3 Tbsp
soy sauce
3 can(s)
cream of mushroom soup
1/2 c
chicken broth
3/4 c
half & half
1 1/2 c
chow mein noodles
1 1/2 c
whole cashews (roasted)
3 c
white rice (cooked)

Step-By-Step

1Preheat oven to 350.

2In a large skillet, saute celery and onion in butter until tender and translucent.

3Add remaining ingredients (except rice) and simmer on low for about 15 minutes.

4Pour in 13x9 pan. Sprinkle with a handful of chow mein noodles and cashews and bake for 40 minutes.

5Prepare rice according to package.

6Let casserole cool down for about 10 minutes and serve over rice.
