I won the Chicago semi-finals of the Simply Manischewitz recipe contest with this recipe. Sounds a little strange, but it really is good.

Notes from the Test Kitchen:
YUMMMM! This one is a winner in our book too. I was a little unsure cherries and balsamic would mix.  I was pleasantly surprised. The flavors complemented one another wonderfully.

Ingredients

chicken breasts
2 tsp
salt
2 Tbsp
olive oil
1 c
thinly sliced onions
1/4 c
balsamic vinegar
1 1/2 c
chicken broth
1 jar(s)
cherry preserves

Directions Step-By-Step

Pat dry chicken and season with salt.

In a heavy skillet heat olive oil. Sauté seasoned chicken until browned, 12-15 minutes. Remove chicken. Add onions to skillet and sauté until tender, 5-6 minutes. Add vinegar and reduce to just a couple of tablespoons.

Add broth, bring heat to high and reduce by half.

Add cherry preserves and cook for an additional 5 minutes until the sauce is thick.

Return chicken to pan to heat through while spooning sauce over chicken. Serve hot.
