Chicken Salad with Cashews

There is a little cafe here in town that serves this. According to everyone who works there it is a top seller. I have tried to recreate it as closely as possible & this comes as close as can be without the actual recipe. This is better the next day so it is great for potlucks and such. Hope you enjoy.

Ingredients

1
chicken breast, roasted (you can either get one from the deli or roast your own)
1
celery stalk, finely chopped
1-2
green onion(s), finely chopped (using stalks)
1/2 c
chopped cashews
1/2-3/4 c
mayo
salt & pepper to taste

Step-By-Step

1Shred or cube chicken. I usally do a little of both so that the salad stays together but you still get chucks of chicken in the finished product
2Salt & pepper to taste
3add remaining ingredients and mix well. Start with 1/2 c mayo then add as needed to get desired consistancy
4serve on bed of greens or on bread as a sandwich. I find that it goes great with egg bread & baby swiss - the flavors seem to compliment each other well.
