Cut chicken into cutlets. You can pound them if you like them thinner.
In 3 different plates or bowls combine 2 eggs and a splash of milk in one. Panko bread crumbs, parmesan, garlic and onion powder and Italian seasoning in the second and flour in the third. Season all with a dash and salt and pepper.
Dip chicken in flour, egg mixture and panko in that order set on a plate.
Heat oil and fry the chicken.
Spread marinara sauce on the bottom of Pyrex dish. Put in chicken cover with a little marinara and parmesan. Cover with foil and bake on 350 for 30 min.
When chicken is done baking put mozzarella on chicken and bake until cheese melts
