1 1/2 lb
boneless chicken breast or skirt steak
green bell pepper & red bell pepper, sliced
taco seasoning mix
pre made flour tortillas
1Prepare chicken or beef by slicing raw meat into 3 to 4 inch strips. I place chicken strips in one zip top bag and beef in another.
2Add salt, pepper, garlic powder, and 1 tbsp. taco seasoning mix. Pour in 1/2 cup veggie oil, close bag and massage bag to coat each piece of chicken or beef with the oil or seasonings. Allow to marinate for up to 4 hour.
3Saute' veggies in a well seasoned, hot, oiled skillet. Sprinkle with one tsp. of taco seasoning, salt and pepper. Cook until veggies are limp. Remove from pan, keep warm.
4Remove chicken or beef from bag, leaving behind the seasoned oil, discard bags. Put chicken or beef in a well seasoned, oiled skillet until done, allowing chicken to lightly brown.
5Place hot veggies and meats on a warm platter garnished with avocado slices and squeeze lime halves over all.
6Serve with warm flour tortillas, Spanish rice, pinto beans, and guacamole salad.
