I tried this recipe and it's amazingly good! What so great about the batter is that it hardly soaks up any oil! And its a nice thick crispy batter! My whole family LOVED this recipe! I found this on the internet, It was posted by a cook named Chefjeb. The photo is my own, as always! =D

Ingredients

boneless skinless chicken breasts-cut into 1 1/2 " pieces
1 large
onion
1 large
bell pepper
12
wooden skewers
BATTER
2 c
flour
2 tsp
paprika
2 tsp
baking powder
3-8oz. can(s)
beer-use a little less
1 Tbsp
garlic powder
1 Tbsp
salt
2 tsp
black pepper
4 dash(es)
louisiana hot sauce
oil
for deep frying

Directions Step-By-Step

Peel and quarter onions. separate into layers of about 3 rings

Cut bell pepper into pieces about same size as chicken

Skewer piece of chicken, onion, bell pepper and repeat about two more times.

Heat oil to 350 - 360 degrees in a very large skillet or deep fryer. IF USING A SKILLET MAKE SURE THE WOODEN SKEWERS FIT.

Combine all ingredients for batter.

Dip skewered chicken, onions, pepppers into batter and fry about 2 minutes on each side, until light golden.

Serve warm.

Okay, I tried this batter to make fried pickles, like Katrina mentioned in an earlier comment...it was AMAZINGLY good! My guests gobbled them up VERY quickly! I served it with a creamy garlic dipping sauce. Thank you so much for the fried pickle idea Katrina!

Gail, I made the batter the night before and put it in the fridge. I didn't wait for it to come to room temp, and it worked perfectly! I'm going to try this for onion rings too! Thanks for the idea!

I had batter left over and put it in the refrigerator and will take it out and let it get to room temp and then I am going to do onionrings. let you know who leftover batter is!!!

Thank you so much Gail for the great review! I'm so glad your whole family loved it! I love this batter so much! I'm going to try dipping potatoes and pickles in it real soon, like you and Katrina said! I know it would be great with probably anything you dip in it! I'll let you all know how it works! =)
