Since moving to New Jersey during Covid, I started to see different food groups from just a State away! My daughter kept on talking about Chicken Murphy. I went to my senior Citizen Group one day and they had it there! I immediately asked for the recipe! I threw in the wine on my own! Sorry I am not picture savvy... I hope you Enjoy this "Little Hidden Gem from N.J."!

Ingredients For chicken murphy - new jersey's hidden gem

  • 4 md
    chicken breast cut in bite size pieces
  • 1/2 c
    flour
  • 2 Tbsp
    evoo
  • 1 lb
    mild Italian sausage
  • 2 Tbsp
    butter
  • 8 oz
    baby bella mushrooms, sliced
  • 1
    red onion, thinly sliced
  • 6
    mini peppers, thinly sliced
  • 1 bag
    Simply Potatoes ("seasoned" variety)
  • 4
    garlic cloves, minced
  • 1 c
    wine (I used leftover Barefoot Moscato and it gave it a lighter taste!)
  • 1 can
    diced tomatoes with celery, peppers, and onion (14.5 oz)
  • 1/2 c
    jarred hot pepper rings
  • 1/2 c
    jarred hot pepper brine
  • 1 c
    chicken stock
  • 1 can
    Campbell's golden mushroom soup (10.5 oz)
  • 1 can
    Campbell's cream of chicken (10.5 oz)
  • 1 lb
    angel hair pasta, cooked or 1 cup cooked brown rice, for serving

How To Make chicken murphy - new jersey's hidden gem

    In a large bowl, coat chicken in flour and put aside.

    Heat EVOO in a large skillet over medium-high. Add sausage and cook until lightly brown. Remove from pan, saving drippings in the pan.

    Add the butter. When melted, add chicken pieces and cook for 5 minutes over medium heat. When lightly brown, remove and place with sausage.

    To the pan drippings, add the mushrooms, onion, mini peppers, and bag of seasoned potatoes. Saute for 5-7 minutes until lightly softened.

    Add the minced garlic; cook just until fragrant.

    Add wine, making sure to scrape any drippings. Let wine reduce and flavor veggies. Add can of diced tomatoes, pepper rings and brine, chicken broth, and both soups. Stir gently to combine.

    Add sausage and chicken back to the skillet. Cover and reduce heat to low and simmer for 15-20 minutes.

    Serve over angel hair spaghetti or brown rice!
