chicken breasts, boneless and skinless
each, salt and pepper
1Slice chicken beasts in two, so that you have 4 thin breasts. Put a piece of saran over each as you pound each with a mallet to flatten.
2Mix the flour, salt and pepper. Dredge each piece of chicken in the flour mixture.
3In a skillet, cook each breast for 3 minutes per side in a small amount of oil. ( I use only about a tablespoon).Remove the chicken from the skillet. Keep chicken warm.
4In same skillet, add 1 and 1/2 Cups fresh mushrooms, Saute til browned.
5Then add Marsalis wine, lemon juice, garlic and butter to mushrooms. Add the parsley. Stir and heat through.
6Serve chicken over cooked fettuccine noodles. Top chicken with mushroom mixture.
