Ingredients

2
chicken breasts, boneless and skinless
1 c
flour
1/2 tsp
each, salt and pepper
1 1/2 c
fresh mushrooms
1 c
marsala wine
2 Tbsp
lemon juice
1 clove
garlic
1 Tbsp
butter
1 Tbsp
parsley
1/2-1 box
fettucine noodles

Directions Step-By-Step

Slice chicken beasts in two, so that you have 4 thin breasts. Put a piece of saran over each as you pound each with a mallet to flatten.

Mix the flour, salt and pepper. Dredge each piece of chicken in the flour mixture.

In a skillet, cook each breast for 3 minutes per side in a small amount of oil. ( I use only about a tablespoon).Remove the chicken from the skillet. Keep chicken warm.

In same skillet, add 1 and 1/2 Cups fresh mushrooms, Saute til browned.

Then add Marsalis wine, lemon juice, garlic and butter to mushrooms. Add the parsley. Stir and heat through.

Serve chicken over cooked fettuccine noodles. Top chicken with mushroom mixture.
