Chicken Hotdish !

This recipe is one that my Mother -in- law , has made for I am not sure for how long but it was a favorite at the Family reunions , and any Family get togethers,

After Mom Passed away, 2yrs ago everyone kept asking did anyone make Aunt Apolonias Hotdish , The children of hers tried to make it but they did not get it right , A Secret to this hot dish is to use a Old Chicken , (farm) and boil it up til done Everyone tried this but used frozen chicken breasts and it does not taste the same at all , You have to use a old hen . Just letting you know . Hope you enjoy !

farm fresh old chicken
2 medium
cut up onions browned
1 1/4 c
celery - cut up
2 tsp
soy sauce
salt and pepper to taste
1 can(s)
chicken noodle soup
1 can(s)
mushroom soup
1 c
raw rice
1 can(s)
1 1/2 c

Directions Step-By-Step

cook the chicken ahead of time and let cool and take it a part. . no bones
dice up the onion , celery , cook up brown the onion ,
add all ingrdients to a roaster pan , or very large baking dish .
add the rest of the ingredieants and stir it up , set your oven on 350 , bake this for 1 hr.
