Ingredients For chicken & gnocchi soup

  • 4 Tbsp
    butter
  • 1 Tbsp
    olive oil, extra virgin
  • 1 lg
    onion, finely diced
  • 4 stalks
    celery, finely diced
  • 4 clove
    garlic, minced
  • 4 Tbsp
    all purpose flour
  • 1 qt
    milk
  • 4
    carrots, shredded
  • 2 - 4 c
    rotisserie chicken, deboned & diced
  • 2 can
    chicken broth, low salt
  • 1 lb
    gnocchi
  • 1 c
    spinach, fresh, chopped
  • 1/2 tsp
    thyme, dried
  • 1/2 tsp
    parsley
  • parmesan cheese

How To Make chicken & gnocchi soup

    Saute the onion, celery & garlic in the butter & olive oil over medium heat. When the onion becomes translucent, add the flour & make a roux. Let butter & flour mixture cook for about 1 minute before adding milk.

    Cook gnocchi according to package directions.

    Into the roux, add carrots & chicken. Once mixture becomes thick add the broth. Once mixture thickens again, add gnocchi, spinach & seasonings. Simmer until soup is heated through.
