4 Tbspbutter

1 Tbspolive oil, extra virgin

1 lgonion, finely diced

4 stalkscelery, finely diced

4 clovegarlic, minced

4 Tbspall purpose flour

1 qtmilk
-
4carrots, shredded
-
2 - 4 crotisserie chicken, deboned & diced

2 canchicken broth, low salt
-
1 lbgnocchi
-
1 cspinach, fresh, chopped

1/2 tspthyme, dried

1/2 tspparsley
-
parmesan cheese
How To Make chicken & gnocchi soup

1Saute the onion, celery & garlic in the butter & olive oil over medium heat. When the onion becomes translucent, add the flour & make a roux. Let butter & flour mixture cook for about 1 minute before adding milk.

2Cook gnocchi according to package directions.

3Into the roux, add carrots & chicken. Once mixture becomes thick add the broth. Once mixture thickens again, add gnocchi, spinach & seasonings. Simmer until soup is heated through.
