Chicken Chimichangas

Anything is good in a fried flour tortilla. I used leftover chicken for this, or cook some especially with this recipe in mind. These are even good the next day cold.

4 c
cooked, shredded chicken
8 oz
sour cream, lite
8 oz
cheddar cheese, grated 2%
1/2 c
sweet onions, diced
6-8 large
flour tortillas
canola oil


1Mix shredded chicken with sour cream and diced onions.

2Warm flour tortillas for easier rolling. Place about 2 tbl of cheddar cheese in center of tortilla, add about 1/4 c of chicken mixture. Fold in sides, then roll up, secure with toothpick if desired. Cook in 2 inches of hot oil till tortilla is browned. Remove, add any topping desired.
