Great minds think alike. I actually do make my own stuffing when I make this dish. This is the original version. Hard not to make changes to recipes.

I made this a couple of nights ago, hardly any leftovers! I chose to make my own stuffing with a gluten free low carb bread and left out the egg because I can't have eggs. Everyone loved the casserole!

Thanks for the approval. I am happy that you didn't have many leftovers, that is a definite sign the recipe was well received.

I have been searching for a simple recipe that does not use cream of chicken. Any suggestions to sub in its place?

Either another can of cream of celery or you could subsitute and equal amount of chicken gravy. The casserole just needs the moisture, so a thin chicken gravy would work just as well I would think. Let me know if you try that and let me know how is works out. I am liking the idea of not using canned soup and I almost always freeze left over gravy for later use. What a great way to use and not use canned stuff that has stuff in in we really don't want to eat.
