Chicken Broccoli Casserole

This is one of my favorite comfort foods. This rich casserole can be made ahead. It is topped with a crunchy, cheesy topping; frozen broccoli and precooked chicken make it easy.

Ingredients

2 10 oz
broccoli, frozen or 4 cups fresh
6 c
chicken, cooked, shredded
2 103/4 oz
cream of mushroom soup, undiluted
1 c
mayonnaise
1 c
sour cream
1 c
cheddar cheese, shredded
2 Tbsp
lemon juice
1 Tbsp
curry powder
1 tsp
salt
1/2 tsp
pepper
1/2 c
dry white wine
1/2 c
parmesan cheese
1/2 c
bread crumbs
2 Tbsp
butter, melted

Step-By-Step

1In a medium bowl, combine the soup, mayonnaise, sour cream, cheddar cheese, lemon juice, curry powder, salt and pepper, to taste, and wine. Whisk together to make a sauce. Pour the sauce over the broccoli and chicken. Mix well.

2Place the mixture into an 11 by 7-inch casserole dish. Pat down to even and smooth the mixture. Combine the Parmesan cheese, bread crumbs and butter and sprinkle over the top.

3Bake at 350 degrees for about 30 to 45 minutes until bubbly and browned. Serve with white rice and a salad.
