Ingredients

onion, chopped

mushrooms, sliced
1 c
zucchini
1/2 c
celery
1 c
garlic clove, minced
3 Tbsp
butter
1 c
tomatoes, canned whole and drained
1 tsp
dried basil
1/2 tsp
salt
1/4 tsp
red pepper
8 oz
macaroni, dry
3 c
chicken, cooked and chopped
1.5 c
whipping cream
2 c
monterey jack cheese, shredded
1/2 c
parmesan cheese, grated

Step-By-Step

1Saute first 5 ingredients in butter until vegetables are crisp-tender.

2Stir in tomatoes, basil, salt and crushed red pepper; set aside.

3Cook pasta according to package directions; drain.

4Combine pasta, vegetable mixture and chicken in a large bowl; spoon mixture into an 11x7x1-1/2-inch baking dish.

5Combine whipping cream and cheeses in a medium saucepan; cook over low heat until cheese melts, stirring frequently.

6Pour sauce over pasta mixture. Bake, covered, at 350 for 40 to 45 minutes or until thoroughly heated.
