This is one of the best chicken and dumpling recipes I have made. The chicken is seasoned and so tender. This is a one dish meal and is great for family get togethers and holidays.
Season chicken with coarse salt. Heat butter and olive oil in dutch oven. Brown chicken on each side. Remove chicken and set aside.
In th4e same dutch oven, add vegetables, bacon chopped in small pieces, bay leaf and thyme. Cook on top of stove about 10 minutes over medium heat. Put chicken back in pot. Add white wine. Boil 2 minutes.
Add vegetable stock, water, salt and pepper. Cover and Cook at 400 for 1 1/2 hours . Take dutch oven out of oven. I then use a fork and knife to cut the chicken into pieces, being careful not to burn yourself.
In a small bowl, combine flour, baking powder, half and half and salt. Mix together. Add heaping tablespoons of dough into dutch oven . Cover your dutch oven and put back in the oven for 15 minutes. Serve hot.
