Ingredients

chicken breast, bone in (or chicken thighs-6)
2 large
green bell peppers-or 1 red, 1 green, sliced
2 large
onions, vidalia, peeled, and sliced
1 c
sliced mushrooms-i like crimini
2 jar(s)
spagetti sauce-or your own pasta sauce
2 tsp
oregano, dried
2 tsp
basil, dried
1 tsp
fresh chopped parsley-to top when done
1/2 c
olive oil
3 clove
garlic-peeled and sliced

Step-By-Step

1Fry chicken in a large, deep, fry pan with a little olive oil (1/2 cup), over medium heat until browned on both sides. Add the remaining ingredients, except the sauce and fresh parsley. Allow the chicken to cook in the peppers, onions, garlic, and mushrooms until softened.
2Add the sauce and cook, covered, at low heat until the chicken falls off the bone.
3I serve this with creamy polenta or gemeli pasta. Sprinkle with chopped parsley.
