This dish has impressed everyone I've ever served it to. Sometimes I have to leave off the mushrooms or the onions, for certain picky folks! This is a really simple, but impressive dish to serve for company. The greens seen in the picture are collard greens.
Saute mushrooms and onions in oil; Remove from pan and set aside. Meanwhile add chicken breasts, sprinkle generously with pepper and cajun seasoning and cook until thoroughly done.
Add chicken broth and heat to simmer, make a smooth flour paste and add to broth. Simmer, stirring until thickened. Return mushrooms and onions to sauce; stir. Transfer chicken to four plates. Serve with hot cooked rice with more sauce on top.
